Potatoes

Many white potatoes stored in the root cellar over winter have sprouted.  Cut them up yesterday and set them out to dry a bit.  Planting 6 rows  today  4 feet apart and 2 feet between plants.  This spacing will give them plenty of growing space. Potatoes are the most nutrient-dense vegetable. Wide-apart rows leave plenty of dirt to hill the potatoes with as they grow.  Hilling keeps the new potatoes from turning green if sunlight hits them.  The green skin on potatoes is poisonous.
